He spent 8-10 years developing the recipe until he finally found one which was consistently reliable and wholly unique. Over the following 5 years, the business grew organically from local farmer’s markets to nationwide ordering.
We have been very lucky to have people all over the nation discover us and request wholesale relationships.
This journey has not always been easy.
Initially, baking was contracted out to another local baker. Later we moved to a dedicated facility, partially to meet demand, but also to prevent cross-contamination.
We were able to inherit a 100-year-old oven which we still use today. Much of our equipment and supplies have been second-hand or hand-made by the owners and staff. Op shops have been our saviour in many cases.
