1/4 cup flour

Make the pastry first. Work the cold butter into the flour, sugar, and salt with a fork, your hands, a pastry cutter, or a stand mixer. I use a stand mixer. Stream the ice water into the mix and dump the pastry onto a lightly floured surface. Press into a round disc that is roughly 1-inch thick. Wrap in plastic wrap and allow to rest in the fridge while you prep the other components. Rest for at least 30 minutes or up to 3 days.

Preheat oven time 425 degrees.
Sweet Jam with Walnuts Brie: With a sharp knife remove the very thin top layer of the brie rind on each wheel. Choose a size wheel to feed the crowd you are serving. Line a small baking tray or dish with parchment paper with enough room for both wheels. If you’d prefer separate baking trays, it’s a dish that’s ok as well. Place the 1st wheel of brie into the dish and sprinkle 1/2 the walnuts on top of the brie then spread the jam on top of that. Sprinkle the other half of the nuts on top, set aside.
