Tori Tori Santa Fe by Esrawe Studio: 2020 Best of Year Winner for Casual Dining February 21, 2021 Photography by César Béjar. Tori Tori serves some of the best sushi in town. But locals love the Japanese res­taurants as much for their environments as the food. Hometown icon Héctor Esrawe has designed four of them, each with its own distinct vibe. One branch is covered in a web of steel lattice; another resembles a brutalist cave. Esrawe’s latest is at the foot of an office tower in the city’s San­ta Fe district, and is inspired by Japanese craftsmanship. “I admire its rigor,” he states. “Japanese artisans take pride in their heritage but can also translate it into new visual expressions.” At the 120-seat eatery, Esrawe built two illuminated white-oak sculptures that evoke the plates found on samurai armor. The larger one doubles as a cylindrical extraction hood for the teppanyaki table, while the other hangs above a grab-and-go store. Behind the sushi bar, abstractions of kanji characters form geometric reliefs in the CNC-cut black plywood wall. The result is an utterly modern homage to ancient Japanese culture.

Reading Time Lying Down on the Job Even as laptops have replaced typewriters, today’s desks remain flat surfaces that often encourage slouching. Bay Area startup Altwork has plowed more than $10 million and 80,000 hours of research into about 15 prototypes and 10 patents for a workstation that CEO Che Voigt says acts as an extension of the body. It consists of a dentist’s-office-style reclining seat, with an attached computer monitor stand, laptop stand and magnetic desk surface, all of which adjust with the push of a button as the user stands, sits or lies down. The magnetic surface holds a magnetic keyboard and mouse so they don’t fall off. “If it’s not comfortable, you can’t do your best work,” says Mr. Voigt. Altwork offers two models priced at $4,650 and $7,650 and has shipped 1,000 units world-wide since 2016, he says. Mr. Voigt hopes future versions will be able to monitor stress levels and provide cooling and heating.
