My kids refuse to eat spinach. How can I prepare it in a way that might appeal to a finicky eater?
First, it’s important to note that spinach is a healthy, dark, leafy, green vegetable that is full of protein, calcium, iron, magnesium, potassium, folate, fiber, phosphorus, thiamine, and vitamins A, C, and K.
Also considered a superfood, spinach, as part of a healthy, balanced diet, is important for skin, hair, and bone health. Additionally, spinach can help improve blood glucose control in people with diabetes, and it lowers the risk of cancer, improves bone health, and can promote digestive regularity.

With the rapid change in spring weather, master gardeners from the Master Gardener Volunteer program at Ohio State University have tips and tricks for local gardeners on how to keep their plants healthy.
The Ohio State University Extension Master Gardener Volunteer program provides horticulture training to interested Ohio residents. Members of the program then volunteer for educational programs and activities.
Markus McCartney, the agriculture and natural resources educator at OSU, said the cold spring weather was not abnormal, and vulnerable plants should be planted later in the season.

If you are looking for a local summer internship, the Ohio State University Extension Office in Highland County has an opportunity available. It will be hiring a summer intern this year. Applications are due online by May 4, 2021.
The internship will include the opportunity to assist with the following programs:
· 4-H Judging: Responsible for assisting and managing project judging. Scheduling judging times, contacting judges, and organizing post-judging packets for state fair judging representatives.
· Assisting with 4-H skillathons.
· Assist with data entry for both 4-H and agriculture and natural resources research.
· Production of the Southern Ohio Farm Show.

With planting under way, a couple of reminders. Keep fertilizer application records to confirm you are following your nutrient management plan and to keep tabs on changes that may occur in your soil nutrient levels. This is a reminder of several good sources of weather information that can be used as part of your fertilizer application records.
