You need to manually activate the password-protect system in order to use it.
First, go to activity.google.com and click on the Manage My Activity verification link.
It s easy to spot on the page because it should appear with a blue pop up that states: You can add more security to My Activity by turning on extra verification.

If you don’t want your partner, spouse or roommate snooping on your Google search or YouTube watch histories but you don’t want to resort to using incognito mode, good news: you can now hide both behind password verification.
All of your Google activity, including web and map searches, YouTube history, and Google assistant queries, are compiled and, by default, visible at activity.google.com. That means that anyone with access to a device you’re logged into can see what you’ve searched, watched, and asked.

Google’s added a new way to keep other people’s prying eyes out of your search history, YouTube faves, and more. As first spotted by Android Police, the company has started prompting users to password-protect their Web and Activity page, which shows off a person’s history across a slew of Google services.
This added password protection is just one of the privacy buffs that Google’s been rolling out after this month’s Google I/O event. This includes a new optional locked folder you can add to your Google Photos account and a new quick-delete toggle that lets you automatically scrub the last 15 minutes of your Google search history.
