Lots of milk and lots of competition

Wisconsin set another state record for total milk production in 2020, despite having fewer cows. The latest production figures from the USDA show that Wisconsin farmers produced 30.7 billion pounds of milk in 2020, slightly more than the previous record of 30.6 billion pounds set in 2019. Milk per cow rose to an all-time high of 24,408 pounds, up 256 pounds from the year earlier. As of January 1, there were 6,932 licensed milking herds in the state – down 360 from a year ago.
Note: California remains as the number one milk producing state with over 40.7 billion pounds produced last year. The state surpassed Wisconsin in 1993 as the leading milk production state and has remained in that position ever since.

Seriously, though, based on my visit to the three-day Dairy-Deli-Bake in Orlando this month, I’d have to say most of the exhibitors were focused on three key things: solutions, celebrations and satisfaction.
Among the solutions,
Perdue Foods’ new chicken burgers fit the bill nicely. With less fat and calories than traditional beef burgers, these all-natural burgers are part of a turnkey merchandising solution that includes the foil-lined bags for the sandwiches that are displayed alongside rotisserie birds – part of the company’s aim to “innovate on products to generate more money and more ways to use equipment,” senior marketing manager John Moore told me.
WCMA Recognizes Nine Industry Leaders with Awards

The Wisconsin Cheese Makers Association (WCMA) Board of Directors has selected nine individuals to be recognized next year at CheeseExpo Global Online for their outstanding work in the dairy processing industry.
In 2021, Mark Schleitwiler will receive the Association’s highest honor: the WCMA Life Member Award. WCMA has offered the Life Member Award since 1918, and Schleitwiler will be the 90th recipient. The award recognizes people who have played a significant role in the success of the Association through leadership, support, and service to the institution and its activities.
