He’s also been charged with wound person with intent to cause grievous bodily harm.
The man appeared in Newcastle Local Court today and was refused bail.
He’ll return to court on July 8.
The 27-year-old woman was stabbed just after 2:30pm and rushed to John Hunter Hospital in a serious condition.
The knife was embedded in her chest and remained in her chest when emergency services arrived.
She remains in a serious but stable condition today.

A woman is fighting for her life in hospital after being allegedly stabbed in the chest at a cafe in Newcastle.
The 27-year-old was rushed to John Hunter Hospital in a serious condition after the blade was left lodged in her chest yesterday.
She underwent surgery to remove the knife and remains in a serious but stable condition.

Police are investigating, after a man was stabbed at a home in Edgeworth last night.
Emergency services were called to a property on Renfrew Crescent just after midnight, following reports a man had been injured in an altercation.
The 30-year-old then presented to the John Hunter Hospital with non-life threatening stab wounds to his arms and buttocks.
He remains there in a stable condition.
Police have been told he was confronted by three people at the home before he was assaulted.
They’re now looking for witnesses, or anyone with CCTV or dashcam footage from the area between 11:30pm and 12:30am.
