In the spring of 2016, after spending over a decade my entire career at the same Boston book publishing company, I began to look for a new job. I secured an interview and showed up with a portfolio of my best marketing campaigns. “These are all for novels,” the person interviewing me commented, examining first an ad, then a postcard, then a sticker, each showcasing in some way a fictional story.
“Fiction is sort of my specialty,” I said. She replied, “We don’t publish any fiction.” Needless to say, I did not get the job.
Four years later, I left my job at Houghton Mifflin Harcourt to own and operate a bookstore, where I continue to champion fiction by putting it directly into readers’ hands. While I moved on, I thought the company was in Boston to stay.

Just that there is something so life-affirming about the sight and smell of bread, that a fresh, fragrant loaf will make your spirits rise as surely as the yeast makes the dough rise to a sunny, earthy, golden hue. And as for cake…do I need to say anything more? Soft, gooey, crunchy, melty, pillowy, in all its various forms, cake, well, is just cake. Scrumptious, celebratory and guaranteed to ignite a state of happiness.

Most of us come by our collection of baking equipment in a piecemeal manner. A few things from mum and dad here, a pan bought for a specific recipe there, a housewarming gift, a . wait, where did that even come from? Peek into those cabinets and you ll probably find a mix of metal and glass dishes designed for baking, perhaps with some ceramic or silicone mixed in.
In baking especially, which material you use can have a significant effect on the results. Ask just about any serious or professional baker whether they prefer glass or metal, and the answer is almost always steer, well, clear of glass.
