Spicy beef burgers recipe

My spicy beef burgers are inspired by the classic meat koftas you find across the Middle East. The meat is flavoured with grated onion, parsley, black pepper and chilli. Thatâs it. The burgers donât have a binding agent, so cook them fast for the best results.
Prep time: 20 minutes |
Handful of finely chopped parsley leaves
2 tsp Turkish pepper flakes
1 tsp ground black pepper
500g minced beef, 20 per cent fat
1 tbsp olive oil
120g mayonnaise
1 tomato, finely sliced
METHOD
Preheat the oven to 200C/ 180C fan/gas mark 6.
Using the coarse side, grate the red onion and then squeeze out the excess moisture as best you can. I use my hands, but you can use paper towel. Add to a mixing bowl with the parsley, Turkish pepper flakes, black pepper and a good pinch of salt. Mix well.

Small handful of finely chopped coriander leaves
1½ tsp ground cumin
Chilli sauce (optional)
Preheat the oven to 200C/ 180C fan/gas mark 6.
Put the chickpeas into a mixing bowl and using your hands, squish them into a coarse mixture â about 80 per cent broken down (I find a mixer goes too far and the burgers break up later).
Add the parsley, coriander, cumin, garlic granules, lemon zest and a good pinch of salt to the chickpeas and mix together. It will look rather dry, but you just want all the flavours evenly dispersed. Add the egg yolk, mix well and then bring it together with your hands. Divide into two and shape into patties about 1cm thick.
Vegetarian bean burgers with caraway and garlic recipe

Pinch of ground caraway
1 tbsp olive oil
Oil for frying
Drain the beans thoroughly.
Use a food processor to blend the salt, pepper, caraway, garlic, onion and olive oil into a smooth paste.
Add the drained beans and blitz briefly â they should still be chunky.
Add the potato flour so that you can shape the burgers. If necessary, add a few more beans.
Shape the burgers â you should get eight small ones or four big ones â and fry in oil until golden brown on both sides.
Turkey and apple burgers recipe

SERVES
2 sweet, juicy eating (dessert) apples, such as Coxâs, peeled, cored and finely chopped
½ tsp chilli flakes
1 tbsp vegetable oil
1 little gem lettuce
Burger sauces or chutneys
METHOD
Mix the turkey, thyme and apple in a bowl, stir in the chilli flakes and season with salt and pepper. Add the egg and mix well to combine. Wet your hands a little to stop the turkey and apple mixture from sticking to them, then take a quarter of the mixture and mould it into a patty in your hands. Repeat to make 4 burgers in total. Dust a little flour on each side of the burgers, then pop them in the refrigerator to chill and firm up for 30 minutes before cooking.
2 Little Gem lettuces, leaves separated
2 plum tomatoes, cut into 1cm slices
2 red onions, sliced into thin half-moons and fried until crisp
METHOD
First make the pickled cucumber. Mix the vinegar and the sugar together until the sugar dissolves. Using a vegetable peeler, shave the cucumber lengthways, working all the way round but stopping when you get to the seeds.
Pour the vinegar mixture over the cucumber strips and toss; set aside. When you are ready to serve, lightly toast the sesame seeds and scatter over the cucumber along with the chilli.
Now make the mayo. Put the mayonnaise in a blender with the chipotle peppers, lime zest and juice and maple syrup, and season.
