Since the 4th of July is on Sunday, the Pulaski County Extension Office will be closed on Monday, July 5. Enjoy your family and company on this special day. Many holidays revolve around food, so it is no surprise that Americans celebrate the Fourth of July with a cookout. When grilling, and for some of you this may be the first time you have grilled this summer, there are several tips you need to remember to keep you and your family safe.

Tips for preserving fruits and vegetables

Pulaski County Extension Agent for Family and Consumer Sciences Matt Barton Many people would like to preserve fresh fruits and vegetables from their own gardens or from local farmers markets to savor when the items are not in season. To preserve produce safely, the U.S. Department of Agriculture provides time-proven canning and freezing procedures. These publications are available for you free at the Pulaski County Extension Office. Here are some basic tips. Blanch vegetables before freezing them. Blanching is the process of heating or scalding vegetables in boiling water or steam for a short time. This slows or stops enzymatic action that reduces flavor, color and texture. It also removes dirt and organisms from vegetable surfaces; helps retard vitamin loss; and wilts or softens vegetables, making them easier to pack in freezer containers.

An additional very important consideration should include what type of flies will impact their pastured cattle, and what method of fly control will work best for their management system. Livestock fly control should be viewed as having a positive economic impact on livestock operations. There are three fly species that economically impact pastured cattle; horn fly, face fly and stable fly.

If you like fresh meat the Lake Cumberland Farmer Market has an abundance of meat available. You can also shop for Mother s Day gifts at the market. Candles, canned goods, leather goods and other crafts are there for you. Jim Howard, who is one of our Tomato Growers in the county will be sharing with you information about the different types of tomato plants that are available for your garden. This will be at the Lake Cumberland Farmers Market, uptown Somerset on Saturday Morning, May 22 starting around 10:00 o clock. If you miss the talk, you can also visit his table and he will share information about the different types of tomatoes to purchase for your land.
