Celebrity chef Richard Corrigan said the hospitality industry in Ireland is in store for âa phenomenal reawakeningâ when the sector reopens this summer.
Mr Corrigan was speaking after revealing that business at his London restaurant, Bentleyâs in Piccadilly, has been âfantasticâ since it started serving customers on its terrace since Monday, April 12th, following the easing of Covid-19 restrictions in England.
âI have to say that before we opened, I was shaking with nerves â genuinely, I didnât know how it was going to go, â the Meath-born chef said.
âWe were such a long time closed, you start to lose confidence â it does hammer you but I have to say the numbers we have had since we have reopened have been phenomenal.â

Perfect pancakes
To make about eight pancakes, sift 125g plain flour into a large mixing bowl with a pinch of salt. Make a well in the centre, and add one whole egg and another yolk. Mix 225ml whole or semi-skimmed milk with 2 tbsp water, then pour a little into the egg and beat together.
