In Wisconsin, Holiday Cheer Is a Raw Meat Sandwich

Who hasn t got a favorite holiday food? In the state of Wisconsin, where cheese, dairy cows and cold (average high in winter, 23 degreees) reign, some just go for the meat.  And it s raw. While this might be a regional treat, most people in the healthcare field, it s fair to say, would frown upon such consumption. To wit: The Wisconsin Department of Health. It recently sent out its annual reminder about this holiday tradition on Facebook. Time for our annual reminder that there s one #holiday tradition you need to pass on: raw meat sandwiches.   

County finds high levels of PFAS in groundwater under Madison airport

Tests of groundwater at two former firefighter training areas at the Madison airport have revealed hazardous chemicals known as PFAS at levels thousands of times higher than recommended health standards. An environmental contractor hired by the Dane County Regional Airport found combined levels of two chemicals — PFOA and PFOS — at more than 68,000 parts per trillion in water collected from a site near Darwin Road, according to a report submitted last week to the Department of Natural Resources. Samples taken from a site near Pearson Street found levels in excess of 20,000 ppt. The Environmental Protection Agency recommends against consuming water with more than 70 ppt of PFOA and PFOS combined, while Wisconsin’s Department of Health has proposed a safe drinking water standard of 20 ppt for the two.

You have so many wonderful things in the Badger state, like cheese, cheese hats, and the literal Land O’ Lakes. But while my love for you is like my love for cheese, I remain steadfastly (lactose) intolerant to this monstrosity known as the cannibal sandwich. For those of you blessedly ignorant of this sin against nature, I apologize. The cannibal sandwich (also known as the tiger meat sandwich, which BARF) is raw ground beef, raw onion slices, and salt and pepper on a piece of bread.

The Wisconsin Department of Health issued its annual warning against eating cannibal sandwiches.  The raw-beef sandwiches, which are usually served on bread with onions and seasoned with salt and pepper, are a holiday delicacy for many Wisconsinites, but they pose a potential health risk. Many Wisconsin families consider them to be a holiday tradition, but eating them poses a threat for Salmonella, E. coli O157:H7, Campylobacter and Listeria bacteria that can make you sick. (And, no, it doesn t matter where you buy your beef!),  the department wrote on Facebook. The department then reminded everybody that ground beef should always be cooked to an internal temperature of 160 degrees Fahrenheit.
