The royal origins of the Crêpe Suzette - without doubt the smartest pancake

Hulton Archive/Getty Images It s the most theatrical of the pancakes: flambéed in a mix of Cointreau, Grand Marnier and Brandy, often table-side, with a delicious sugary orange and butter sauce. But who is the famous Crêpe Suzette named after? Well, there are several versions of the story: two of which involve royalty. The most famous story, and one popularised in the memoirs of the chef Henri Charpentier, takes place in the Café de Paris in Monte Carlo in 1895. A then 15-year-old Charpentier was waiting on the Prince of Wales, the eldest son of Queen Victoria, and the future King Edward VII.
