Il y a 11 ans, en accordant une indication géographique protégée (IGP) au canard à foie gras du Sud-Ouest, l'Union européenne consacrait officiellement le lien entre ce produit d'exception et son terroir en lui accordant sa protection juridique.

Avec 19 millions de canards en IGP, (contre 10 millions en 1999) le Sud-Ouest représente à lui seul la moitié de la production française.
Cela ne signifie pas bien sûr que la production de canard ait doublé, mais que progressivement, de plus en plus d'opérateurs sont entrés dans la démarche IGP..
