วิทยาลัยอาชีวศึกษานครราชสีมา ได้ก่อตั้งเมื่อวันที่ 1 กันยายน 2482 เดิมมีชื่อว่า โรงเรียนช่างทอผ้าและเย็บผ้า ตั้งอยู่ริมบุ่งติดค่ายทหาร กองทัพภาคที่ 2 อำเภอเมือง จังหวัดนครราชสีมา หลักสูตรการศึกษา รับผู้จบการศึกษาระดับประถมศึกษาปีที่ 4 ศึกษาต่อเป็นเวลา 2 ปี ก็จบหลักสูตร เปิดทำการสอนเมื่อวันที่ 1 กันยายน พ.ศ.
2482 รุ่งเรืองตามลำดับซึ่งพอสรุปโดยสังเขป ดังนี้ .

ได้เปลี่ยนชื่อจาก โรงเรียนการช่างสตรีนครราชสีมา รับนักเรียนที่สำเร็จการศึกษาระดับชั้นประถมศึกษาปีที่ 4 เข้าศึกษาต่อลักสูตรการช่างขั้นต้น 2 ปี และรับผู้สำเร็จการศึกษาชั้นมัธยมศึกษาปีที่ 3 เข้าศึกษาต่อหลักสูตรการช่างชั้นปลาย 3 ปี .

ได้ย้ายจากสถานที่เดิม มาสร้างใหม่บนเนื้อที่ 19 ไร่ 3 งาน ริมถนนมิตรภาพ ด้านหน้าเป็น ต้นทางของถนนมิตรภาพ ใกล้ทางเข้าเมืองบริเวณอนุสาวรีย์ท้าวสุรนารี ด้านหลังติดลำตะคอง ด้านซ้ายติดโรงเรียนอนุบาลนครราชสีมา และด้านขวาติดโรงเรียนเมืองนครราชสีมา .

UNICEF เข้ามาให้ความช่วยเหลือตามโครงการความร่วมมือระหว่างประเทศ จึงได้เปิดหลักสูตร 4 แผนก คือ แผนกผ้าและเครื่องแต่งกาย แผนกอาหารและโภชนาการ แผนก คหกรรมศาสตร์ทั่วไป และแผนกศิลปหัตถกรรม พร้อมกันนั้นก็พัฒนาครูผู้สอนให้มีความรู้ เพิ่มขึ้น ให้งบประมาณก่อสร้างอาคารเรียน โรงฝึกงานและจัดสรรวัสดุอุปกรณ์มาเพื่อการเรียน การสอนให้เป็นไปตามความต้องการ .

วิทยาลัยอาชีวศึกษานครราชสีมา ตั้งอยู่เลขที่ 272 ถนนมิตรภาพ อำเภอเมือง จังหวัดนครราชสีมา รหัสไปรษณีย์ 30000 มีเนื้อที่ทั้งหมด 19 ไร่ 3 งาน สถานที่แวดล้อม ประกอบด้วยสถานศึกษา บ้านพักข้าราชการ ตลาดสด ธนาคาร วัด โรงพยาบาล ลำน้ำตะคอง คูเมืองโบราณและถนนมิตรภาพ .
