This is a quick sauce, so use really good quality toe nay matoes and these are the best. Put some salt and pepper in there. Sure. Simmer for 20 minutes then add the fresh basil. You can freeze this ahead of time. Should we pretend . Go ahead and put it . Now the chicken. I put it between two sheets of plastic wrap and pound it. You like it thin, right . Yeah, it spreads it out to cook evenly. It tenderizes the chicken and makes me feel like im eating more if its big. Kind of fools me. Powder and pepper. Change. At this part of the recipe, crumbs on here. Normally, wed be putting it in flour, eggs and bread crumbs. It. This way, were cutting it down. Ive got it in some olive oil here. Brown it on each side. We didnt even know, you know, if anyone was going to go and see it or how commercial it was going to be. Kind of like sundance, where its gotten better and better. You know, we got best picture, as well. Just the best thing, brilliant. What i love about the film is you said, it wasnt maybe big hollywood production, but it is the story that pretty much everybody has, i think, at least if they are an immigrant family. For you, it was something you really wanted to play, a truly irish role, right . Yeah. It was really, really important for me to find the right irish role to play. From and, you know, it was important that the first irish role i played capture ed d the lifestyle i had growing up. But even what you were saying about it being a story of immigration, like basically, its a story of anyone. Even if you moved down the road, moved out of your mom and dads house, youre going to college or Something Like that, like everyone its just that feeling of knowing that you cant go back to where you came from.
