When i saw you in your suit with that look, you just looked like every one of those cleancut conservative engineers that i remember from nasa. Salt and pepper. Thats going to get them cooking. How long is that going to take . A coupl the slower, the deeper. Theyve gotten caramelized. Thats the consistency you want right there. Talk to me about the aioli. Why do you like this sauce . It has to add balance. The burger is so rich, you want to add a little zing to it. Aioli or fancy mayonnaise. Chili sauce so you got a little bit of heat. Tomato paste. Garlic. A little salt and pepper. Real simple. The best part about a lot of this stuff is you can make it ahead of time. Youre going to have a lot more than the recipe. It is that easy. Youll have a lot more than to take to the burgers. It is a good dip, a good dressing. Weve got the burgers. Winter, football season, so people arent grilling outside anymore. I like to do them in a pan because i know the grill marks them nice and caramelized all over. Then you keep your juices.
