Boneless strip steaks . Yes. These happen to be prime, but any kind of steaks. Choice would be the better one. Were going to season and grill. Were grilling on a pan here in the house. Make sure to have the fan on. With the warmer weather coming up, well took outside. Well cook on each side and allow them to rest. You have cutup tenderloin as well. Yes. Thats going to help develop the base sauce we have cooking right here. We have the trim from top round or scraps from the beef. Were going to take and turn that down. Were going to have a little bit of garlic and shallots. We have a little bit of oil. Were going to go in with shallots and mushrooms. This is actually, again, the flavor enhancer. Would you call this a a little bit of liquid. Were going to brown this off. Well make a stock and reduce it. Well cook it four to five hours, very slowly. Well deglaze. Were making the foundation for our sauce. Do you ever go to the supermarket. Theres a section where they have stock on the shelves. Right. Could you do that if you didnt have the time . Whats going to happen is a little bit of the stock is okay, but if you could buy a little bit of reduced veal stock, it gives viscosity. This has been cooking. Its reduced down. Well turn the flame up. Well strain it. What youre left with is this sauce right here. As we take this shot, i want to say we have our tasting table downstairs. Weve had pizza this morning and now to steak friftte. This is how we make the sauce and finish it. Bring it back to temperature. We peppercorns are inside. Well go over here. Were going to make the foundation for benaise. Is it hard to make . It didnt. Its a warm mayonnaise. The its part of hollandaise. Were going to bring this down, boiling, reduce it. Theres a little bit of vinegar when it comes down. Drizzle in here. Bring it down. Were passing it and left with what we have right here. Explain why do you put it in another bowl with ice . Were going to apply it here to a traditional hollandaise sauce. Traditionally it sounds complicated but it isnt. Stand back. I almost all joking aside, this is running. If you have the temperature of the butter, its oall on the recipe online. You can emulsify without having a double boiler. You have herbs here. Exactly.
