Započelo je slučajno, čišćenjem male konobice ispod galerije umjetnina na Veloj Placi u Krku krajem 1999. godine u potpunom neznanju da bi navedeni prostor mogao kriti tisućljetne prostore i spomenike. Pri jednom slučajnom odronu tla, na vidjelo je izašao nadgrobni spomenik s prikazom poganskog Erota (malog djeteta s krilima na glavi). Taj slučajni odron tla pokrenuo je veliko i mukotrpno iskopavanje a zavrsilo je 2003. godine velikim otvorenjem cocktail bara (za nepušače) u iskopanom prostoru površine čak 900 kvadrata. Jedinstvenost prostora su prepoznali čak i svjetski poznati band iz 80-tih Simple Minds koji su nazočili otvorenju 2003.!. . Kao što je već navedeno, svi prostori unutrašnjosti Volsonisa su prije 1999. bili potpuno pod zemljom te nitko nije bio upoznat s njihovim postojanjem. No unatoč tome, pod paskom konzervatora, poslije čak 850 kamiona zemlje i kamena iskopanih bez moderne aparature već naprosto lopatom i karijolom, ukazao se ovaj jedinstveni ambijent. Smješten u samom centru grada (na glavnom trgu), Volsonis predstavlja prostor iznimne vrijednosti u kojem danas imate priliku uživati dok ispijate jutarnju kavu, večernji cocktail ili tulumarite na našim partijima pet metara u dubini zemlje zajedno sa starim Rimljanima.. . Odakle naziv VOLSONIS?- Volson (lat., genitiv=Volsonis) je bio dekurion odnosno rimski senator u gradskom senatu čiji smo nadgrobni spomenik pronašli zajedno sa raznoraznim drugim vrhunsko izrađenim spomenicima poput žrtvenika, stela, cipusa i kapitela. Na spomeniku je prikazan u klasičnoj odori sa svojom suprugom Fatom (po kojoj je caffe bar za pušače unutar Volsonisa dobio ime)..
