China, a country that eats 28% of the world’s meat and half of all the world’s pork, is moving in a plant-based direction.
The Guardianreported on the recent changes in the country.
The Good Food Institute (GFI) reported that China’s plant-based meat market was projected to grow between 20 and 25% annually. The industry was worth $910 million in 2018. China’s perceived connection between wealth and meat is no longer as strong as it once was.

A new generation of consumers, having lived through African swine fever and the coronavirus, are much more open to a plant-based diet. China is also a significant producer of plant-based products and has the capacity to expand to serve an eager, global plant-based market.

Consumers in the United States have increasingly turned to plant-based meat substitutes since the pandemic, and now some of the biggest fast-food chains in the country like McDonald's will be selling those goods as well.
The popular plant-based alternative meat company Beyond Meat signed a new partnership with McDonald's last week, a vital step in the growing shift to take meat alternatives into the dining mainstream in the country.

Regional-level collaborations and big brand influence are crucial to help Asia’s plant-based meat sector when it comes to diversifying the raw ingredients used and to help it truly prosper on the global stage.
According to the Good Food Institute’s (GFI’s)
Asian Cropportunities​ report, soy and wheat are ingredients currently dominating the plant-based meat industry despite a wealth of alternative options – a scenario that is risky for the sector as a whole, especially in Asia.
“Consumers in Asia [are] familiar with mock meat products predominantly made from soybean and wheat [which] are often perceived as inferior sources of protein compared to animal protein,”​ said the report.

When chef Eddy Leung was tasked with cooking what was touted as the world’s first lab-grown fish fillets in his kitchen in Hong Kong, he pan-fried some and deep-fried others before finally deciding on breaded fish burgers with tartare sauce.
“Before I cooked the fish it was quite firm, but after I cooked it, the texture changed to being like real fish,” Leung said of the culinary experiment that took place in the gritty Wong Chuk Hang neighborhood late last year.
The fillets tasted and smelled like normal fish, but with the consistency of crab cakes, he said.
