Oliver Summers, 26, of Brighton Road in Worthing, was spotted dodging potholes while driving on one wheel by officers in an unmarked police car on February 20.
The incident took place on the A24 northbound, between Southwater and the Hop Oast roundabout.
PC Darren Balkham, who recorded the footage as a passenger in the police vehicle, said: “As a road user, the manner of riding I witnessed fell way below what I’d expect of a safe and competent motorcyclist.

“Had the rider come off his bike, he could have caused serious injury or worse to himself or someone else.”
Bradford and Keighley Magistrates Court TWO people have been convicted of stealing alcohol from shops in the Bradford district over the past month, while a further five have appeared in court for the offence. Six of the people were called before Bradford and Keighley Magistrates’ Court on charges of alcohol theft, three of the cases have since been adjourned, while the outcome of one case is unknown at present, as is a further case being heard in Sussex. The two others have been sentenced, copping a community order and fines for their lawless behaviour. Michael Christopher Seed, of Railway Road, Ilkley, pleaded guilty to stealing two bottles of booze worth £53 from the Tesco in Springs Lane, Ilkley, on January 17.
Four people have been arrested after a police officer was assaulted.

Just before 10.30pm on Saturday (1 May) officers responded to reports of criminal damage being caused at a communal block of flats in Sussex Road, Haywards Heath said police.
The group attempted to disperse from the area but officers were able to locate four people.
A spokeswoman said: “Officers engaged in communication with the group before they allegedly became both verbally and physically aggressive towards the offices on scene. One of the women is alleged to have punched an officer in the back of the head before biting the same officer’s hand.”
Sandijs Dreimanis, 18, has been named by police and appeared at Crawley Magistrates’ Court earlier.
Students and staff had to be evacuated with their hands on their heads after shots rang out at Crawley College, West Sussex, on Monday.
The heroics of one teacher and their colleague, who were injured tackling an armed suspect, were lauded by police and the college praised the actions of the emergency services.

Local officers were liaising with counter-terror specialists on Monday evening but later announced that it is not being treated as a terrorist incident.
On Wednesday morning Sussex Police announced that Dreimanis, of Barton Walk in Crawley, has been charged with possession of an imitation firearm with intent to cause fear of violence, two counts of assault occasioning actual bodily harm, and possession of a bladed article on a school premises.
