Missouri chefs get creative with cannabis-infused food

Cannabis-infused food has come a long way from dorm room pot brownies.
The options are growing for Missouri’s nearly 100,000 medical marijuana card holders who prefer to take in cannabis by eating rather than smoking. More dispensaries are popping up in the St. Louis region offering infused soda, gumdrops and cookies.
As other companies ramp up production, a team led by Dave Owens, director of culinary at Proper Brands, is one of the few producers of cannabis-infused chocolate bars in the state, St. Louis Public Radio reports.
Jack Cardetti, a spokesperson for the Missouri Medical Cannabis Trade Association, noted that there are already
more dispensaries in Missouri than in Illinois. He added that one week in April, the industry generated $3.3 million in sales and that the state is about to reach $40 million cumulatively.
“The thing I think we re most proud about in the state of Missouri is for those 100,000 Missouri patients they don t have to drive halfway across the state to get their medicine. Most Missouri patients will live within 30 minutes of a licensed dispensary,” he said.
