Negroni recipe: A British twist on a classic Florentine mix

Although I was always rather partial to hard-core cocktails, I discovered the Negroni quite late on. well, ten years ago or so. I never really liked its medicinal flavour until one night in The Groucho Club when I finally bit the bullet. Since that night, it’s been my cocktail of choice. My bar staff even shove one in my hand on arrival at Mark’s Bar when they can see that look in my eyes and danger ahead. © Chris Hoare It’s everywhere now, of course, and on all good go-to cocktail bar menus. It also has a great backstory, starting its life in Florence in 1919 when Count Camillo Negroni invented it by asking bartender Fosco Scarselli to boost up his favourite cocktail – the somewhat tamer Americano – by adding gin rather than the normal soda water. Scarselli also swapped the Americano’s typical lemon garnish for a twist of orange to stand it apart visually on the bar and to add a little fruitiness to the potent mix.

5 Florentine cocktails to make at home

This super-hip spot near Mercato Centrale has won a host of awards for its artisanal cocktails. Bar manager Michel Granpasso Orlando devised this wintry drink to make the most of the citrus fruit in season right now, but insists the recipe is not a rule. “Have fun and play with the quantities of honey, lime and rum to suit your tastes. I really like to use Sichuan pepper for its unusual numbing sensation you can find it for an affordable price at ViviMarket, near San Lorenzo. Make plenty of the salt and pepper mix as you can use it for margaritas too.”
