Colorado Springs chefs offer tips for selecting and using winter citrus fruit

Citrus fruits are Mother Nature’s gift of vitamin C during the winter, just in time to chase away the sniffles. The bright colors of oranges, lemons, limes and grapefruit are a welcome relief to gray winter days; their juice is a refreshing treat; and they’re packed with ascorbic acid and antioxidants. Today, we take a look at some of their less familiar cousins also rich in vitamin C. Think kumquats, pummelos, and pomegranates and we’re throwing in pineapples because we love them. Kumquats are about the size of a large grape. Unlike other citrus, the peel of the kumquat is sweet and edible, while the juicy flesh is tart. They add a nice snap of flavor in salads. They can be found at Middle Eastern markets fresh or pickled in heavy syrup.

Gumbo cook-off champion to hold free gumbo cooking class

David Cook, co-owner of Gather Food Studio & Spice Shop, 2011 W. Colorado Ave., won the 2020 Mumbo Jumbo Gumbo Cook-Off in Manitou Springs. But, because of the pandemic, the event is on hold this year and Cook can’t defend his title. Not to be deterred, he will do a free livestream Geaux Gumbo cooking class at 4:30 p.m. Sunday. “I’ll be demonstrating the recipe I made for the contest and the cornbread I served with it,” he said. “We (Cortney Smith, co-owner of the studio, will join Cook) are doing the event to promote art and culinary in our Springs community.”

Restaurants and bars remain under on-site dining restrictions as we write this and the industry as a whole has faced a massive reckoning that’s left some spots closed permanently, others on hiatus, and many at death’s door. We heard from business owners in our Dec. 9 issue (see “Fate of the Industry”), but we want to continue our tradition of an annual year-in-review column despite the hardships facing our food and drink community.
