Sink or swim: Irish hotels quick to respond to pandemic challenge

John Burke, the managing director of the Armada Hotel and the first Clare person to reach the summit of Mount Everest, is never one to shy away from a challenge. Just six months after the Spanish Point business clinched the Hotel of the Year and Best Wedding Venue accolades at the Gold Medal Awards, Burke had to temporarily lay off staff when the coronavirus pandemic hit Ireland. The initial lockdown was fairly severe, on myself and everyone who worked for me, he says. Once Burke had come to terms with the hotel s closure and disappearance of its spring wedding business, he decided to put the hotel s hibernation to good use. In celebration of his favourite British dish, he’s offering his famous pies for no more than a quid during British pie week. Feast on Mr Fogg’s homemade Dedham Vale beef, suet pastry and home smoked Dingley Dell bacon pie with mashed potatoes, British greens and braising liquor from the 7th to the 11th of March, from 12pm until 4.30pm. Mr Fogg’s Tavern is the eighth project from Charlie Gilkes’ and Duncan Stirling’s Inception Group and houses London’s largest collection of gins. Based on the adventures of Jules Verne’s fictional explorer, Phileas Fogg, Mr Fogg’s Tavern has an upstairs downstairs theatrical theme with a Victorian pub on the ground floor and a refined Gin Parlour (I love gin) and Salon upstairs.

Do Not Disturb The Fullerton Bay offers one hundred rooms and suites, each with floor-to-ceiling windows that offer expansive views of the Marina Bay waterfront or city skyline. My partner and I were checked into the Premier Bay View Room on the first floor, which was fitted with an additional outdoor deck and two cosy loungers, facing Marina Bay Sands. Unfortunately, we were there during the rainy season; we didn’t quite get to enjoy the experience of lounging by the bay in the evening.
