メンマ市場の大半が中国・台湾産 　日高さんは、タケノコが高さ1～2メートルに伸びた状態を「幼竹」と名付けた。竹林整備ではこの幼竹を間引くのが最も効率的だ。春の竹はまだ柔らかく、根元を蹴ったり、ノコギリで切ったりすれば倒れる。 　そのまま捨てられるこの幼竹に価値をつけられないか。思いついたのが、メンマだった。
