Valentin Blatz was one of the Milwaukee brewers who capitalized on the catastrophic Chicago Fire to fortify their sales outlets.

The craft brewer is in the midst of operating the UpTop rooftop bar, a pop-up bar located across the street from the taproom on S. Second Street.

They’ve even written an algorithm for an AI inspired IPA series of beers.

Their beers complement the fantasy themes found in the games and cards found in the store adjacent to the brewery.

The Milwaukee company now has four locations and a portfolio of more than 50 beers.

Stout, honey bock, citrus wheat ale and dark lager are rolling out this winter.

With 515 recipes and counting it’s safe for them to say: “Every Pour. Every Toast. Every Taste.”

Bootleggers, ancient recipes, low alcohol brews, and old European folk ingredients all figure into their theme in what has to be one of the smallest breweries in Wisconsin.
