Summery pasta salads make the perfect side dishes for barbeque, fried chicken, and many other entrées you find yourself serving during these warm-weather months.
There really isn’t much of a recipe to follow when we mix together cooked pasta, fresh vegetables, a light dressing, and a little seasoning. We can let our imaginations run wild.
I paired whole wheat penne pasta with lots raw veggies, and another version with grilled veggies. Any small to medium size pasta, of various shapes will do.
The raw veggie version of pasta salad consists of cucumber, black olives, tomato, onion, fresh dill and basil. A traditional vinaigrette made of vinegar and oil works well, or just a few splashes of red wine vinegar is sufficient, also.
