The restaurant will sell Maine, Connecticut and New England lobster rolls, plus specialty rolls like the Deep South, with chipotle mayo and candied jalapenos; the Hawaiian, with shredded coconut, mango and coconut mayo; and the King Louis XII, with prosciutto, mozzarella and cognac cream mayo. The menu also will include sub sandwiches and macaroni and cheese bowls.
Tretola, whose culinary experience includes management and executive chef positions at Top of the Mast in Seaside Park (now Chef Mike s ABG) and Channel Marker Cafe in Lavallette, started his meat and seafood business in 2018 with an 800-square-foot store in Mystic Island, a small community in southern Ocean County. He has since launched two related companies Mystic Subs & More and Mystic Lobster Roll Company and franchised more than half a dozen throughout Ocean County, plus one each in New York and Florida.
