The Beef Shack drive-thru on Jefferson Street is well poised for success during the pandemic. (Image via John Ferak/Patch Editor )
JOLIET, IL During the last week of November 2018, I wrote about the grand opening of Joliet s first Beef Shack sandwich shop at 1606 West Jefferson St., and then like a ghost, I disappeared. Oh, I drove past the new Beef Shack literally hundreds of times these past two years, I just never stopped.
When Beef Shack opened as a new Joliet restaurant, I was not sure whether it would sink or swim. So many restaurants often fail for a myriad of reasons.

Downtown Joliet s Catrinas Mex restaurant is donating all sales Saturday back to its employees. (File image via John Ferak/Patch Editor )
JOLIET, IL Some restaurants are geared for indoor dining, and
downtown Joliet s Catrinas Mex is one of them. After the first coronavirus pandemic shutdown for Illinois restaurants and bars from March through June, Catrinas Mex enjoyed a summer resurgence. Lots of people began dining here, and many enjoyed their margarita Yard Cups and the outdoor patio.
Fast forward to October. Will County s coronavirus statistics were skyrocketing, and Gov. JB Pritzker decided to halt all indoor dining and bar gatherings once again. The governor s mandate remains in effect heading into the middle of December.
