The cook behind the recipes, Thibodaux native and Nicholls State University student Rodney Duke Woods Jr., has built an online following of more than 6,800 people who wait eagerly for photos of his meals.
“When people tell me I inspire them to become vegan, that just motivates me even more to continue to do what I do, Woods said. Switching your diet or your lifestyle isn’t an easy thing to do, so if I could do that just by posting pictures, I really feel like that’s an accomplishment for me and for everybody else.”
