Cook it: The Dublin Cookery School is kicking off its Summer BBQ Series with an Indian cuisine focus on May 18. The menu for the course (€195) takes inspiration from the flavours of tandoor-style cooking and street-food grilling and includes dishes such as chapati and tikka platters, mango masala pickle and caramelised pineapple and pistachio kulfi. A big emphasis will be put on high-quality ingredients, the importance of marination, and how to replicate the tandoor-quality grilling seen in professional and authentic kitchens.
