In a year when everyone and everything has had to evolve, the food and beverage industry has been no exception. As the national lockdown brought the hospitality industry to its knees, it was evident that like everything else, business models for restaurants and bars would have to change too. From large hotel chains to independent restaurants and cafés, everyone switched to delivering to people’s homes. It didn’t matter if you were making a Bombay Sandwich or an impossible-to-pronounce exotic dish, if you didn’t deliver, you perished. Even fine-dining restaurants such as Americano and Qualia have had to find ways to evolve their meals for a box and some are even delivering to places they never covered before: eg Alibaug.
