Cooking up culinary hertiage

By Caitlin Hartney Most days in the kitchen, Annie Henry is a one-woman show. Working out of a commissary prep space on Chenango Street, the Middle Sister Sandwiches co-owner grocery shops, cooks, cleans, coordinates order pickups and makes deliveries to hungry, appreciative customers around the area. But she’s not really alone. Her sister, partner and creative mastermind, Jacque Henry (pronounced “Jackie”), is equally, if differently, invested. A full-time oncology nurse at Roswell Park Comprehensive Cancer Center, Jacque simply can’t be in the kitchen with Annie most shifts (though she is when she can). But it was Jacque who came up with the idea for the business, aimed at making global food less intimidating to westernized palates, and it was Jacque who jumped at the opportunity to get the fledgling business up and running.

This Wednesday, April 28, 2021, there will be a Mumbo Wing and Steak Sandwich Pop Up from 11 am to 3 pm. It will be located at The Broadway Market, 999 Broadway in Buffalo. Lina Brown Young, John Young’s daughter, will be cooking up the wings using her dad s secret Mumbo wing sauce recipe. The steak sandwiches will be made by Stone, who used to work at Young’s Wings N’ Things. Orders are to-go only and by pre-sale only, which you can place here. The proceeds from the pop-up sale will help fund a new mural honoring John Young and his contribution to Buffalo history. The location of the mural will be on the outside of the Carl Jeff Barber Shop, 864 Jefferson Avenue in Buffalo. The project is sponsored by Buffalo Bike Tours and Michigan Street Corridor.

Who Really Created the Famous Buffalo Chicken Wings

Who Really Created the Famous Buffalo Chicken Wings Who really created the first Buffalo chicken wings? It depends on who you ask. The Anchor Bar in Buffalo claims to have created the phenomenon in 1964 when Teressa Bellissimo deep fried chicken wings and covered them in secret sauce for hungry diners. But it was John Young who started serving uncut chicken wings that he breaded, deep fried and served in his own special Mumbo sauce, at his Buffalo restaurant, beginning in 1961. John Young’s Wings n’ Things is still widely-regarded as the original Buffalo wing today. The Young family tells WKBW no marketing and no trademark is why John Young isn t attributed with creating the New York staple.
