When the coffee shop s owner decided to retire the following year, Regina and Brandi found themselves, unexpectedly, taking over the breakfast and lunch service for which the coffee shop had been known. There were customers who wanted breakfast, Brandi says, and it just didn t make sense to turn away customers who were already turning up.
Not only did the 8 a.m. to 1 p.m. service add to Apt s business, the owners say, but it filled a need. Being responsive to Brewster s year-round community has been a priority, Regina and Brandi say, whether that involves referring diners to other Brewster restaurants when Apt is full or dropping off dinner as the restaurant owners did recently when surgery kept a couple of Apt regulars at home.
