I have always loved to bake.
Mum and the Edmonds Cookbook got me started when I was about 10, I think.
I can remember making pikelets, scones and banana cakes at home, and for the neighbours.
Sante biscuits were a favourite, too, and Patty Cakes (now called cupcakes), Melting Moments, Yo Yoes (yum), cheesecakes (the pastry-bottom kind), peanut cookies, and Kisses filled with jam.

For my son Jake's first birthday in 1989, I wanted to make something special — the book of choice back then was the Australian Women's Weekly Birthday Cake Book.
I made the duck.
Lots of carving, yellow icing and an icecream cone for the beak.
It took me a couple of days and was slightly stressful, but the end result was pretty good, not really edible, but pretty good.
From then, I was hooked.

I started doing birthday cakes for friends’ children, and each year I would pore over more books looking for inspiration for Jake's next birthday.
There was the Ghost Cake, with eggshells for eyes and Jaffas rolling around inside for eyeballs.
A train, a snake, various numbers, Donald Duck, a Tamagotchi, Spiceworld, just to name a few..

And then I started experimenting with Chocolate Gateaux.
They were fairly “untidy” looking cakes at first.
Not a lot of finesse, but a lot of “mmmmmms” and “ahhhhhhhhs” from the consumers, which was very encouraging.
The recipe I used for these is what I still use today, tried and true, and I haven’t found a better one — moist and rich and chocolately, delicious! .

Over the years, I have been asked to make many cakes for different occasions, and this has now evolved into something that seems like it could get “serious”? Now that would be amazing — to have a successful cake-making and decorating business.
I am always looking to learn new techniques and am constantly gob-smacked at what some people are creating.
So incredible! I am self-taught, but would love to do some classes.
My latest accomplishment is mastering sugarpaste roses.
Tricky little things, but the results are so worth it — they are beautiful.

In my opinion, it is no good having a beautiful cake if it doesn’t taste as good as it looks, and I only use recipes I know I can rely on and have tasted myself.
