Coli, the mortality late neck mortality rate here is the worst of any foodborne blog, and as i said, the only good thing about it is that its rare, very fortunately of course. What can you do to eradicate it from a food preparation area . Well once against a food business, and it does from time from time to time, it can be very difficult to get rid of. It gets in the drains, gets on surfaces. There are things called biofilms, where there is a sort of, just a layer of stuff on surfaces and on slicers, and its very difficult to get rid of it from there. So basically what businesses have to do is to make sure its not there in the first place, and have a very rigorous cleaning regime making sure that the listeria isnt in their premises, because its killed by cooking, but sometimes products that are already cooked can get re contaminated while being sliced are handled in a food business. So its a very versatile, sort of cunning sort of bug, and its one that food businesses pay a lot of attention to, because prevention of course is the word of the day.
