The new must-try tacos in downtown Huntsville Updated Feb 01, 2021; Facebook Share Opening a Champagne Taco Kitchen to-go order reminded me of unboxing a sweet new pair of kicks. The to-go containers are shaped similar to shoeboxes. And since the menu I’d read earlier online looked intriguing, I was psyched to get back home, open these sleek cuboids and dig-in. The tacos inside turned out to be worthy of the Champagne name. Champagne Taco Kitchen is a facet of BeeZr Gastropub + Social Exchange, a long gestating project which finally opened late 2020 at 109 North Side Square downtown. Their carnitas tacos ($10 for two) are hearty yet refined, the taco equivalent of “Machete” tough guy Danny Trejo in a tux. Pulled-pork confit, cotija cheese, cilantro, roasted corn and guajillo salsa, double wrapped in some awesome tortillas. Excellent balance of textures, ingredients and flavors. Really cohesive. Hough-hewn appeal from the pig, smokiness from the guajillo, some zing in there too. The tortillas combined soft taco malleability with hard shell funkiness.
