Glenn. doing some cooking this is what we like to do every Saturday morning they still I I have that Jamie from Cole says it's always a sort of puppy time when he could get supper club which seems a bit culture than the pop up that he isa food to people in every now and again and it's always sell to hell and it's well the successful yet so essentially we just do 10 to 12 course tasting menus across Sheffield city center to just 10 to 12 yeah yeah yeah we try to keep it quite informal food goods obviously but it's a really relaxed environment it's me and my fiance that do most of the work with it so we're quite chatty and we like to get over the customers it's just good fun for everyone really. We've done baking this is this is stuff that you could see fit to take for a Pashto Yeah definitely so every part 2 of the dishes we're doing today are well one of them straight off the last menu we've done and one of them's in progress for one of our up and coming events so that both would fit into a taste of making style but can be recreated loosely I just made it bigger maybe because you know eating 12 courses you probably want more things which that sum up a little bit today just so we've got a substantial amount so we can all actually have a taste thank goodness otherwise I'm going to say off your part because I need to wait let me see you do the honors what are the dishes you're going to be cooking today so we've got a vegetarian dish and then we've got a meaty dish so the 1st dish is a barbecue celeriac steak So we've actually smoked on the barbecue for about 14 hours reading like this and we're serving not it's just cheese and onion but it's quite a few different elements so we've got a truffle the whole grain must achieve source and we've got about 5 different textures of onion which will speak for as we go for it addition a bit and they're used to this in meaty dishes and also then we've got roast duck breast that was served and we have preserved cherries which some of them of our sort from last year's crop that we have kept a year so we can keep using them and was 7 out with passing up blue cheese with some maple toasted oats it sounds pretty delicious want to get Starr said and whilst you sort of get all the things together and I'll come back to you I'm going to also talk see where James James our delay. Meat so he's just on the outskirts of Sheffield I've used him for about 5 years now since I started a milestone he started using Lee and he's good to me looked after me and how do you how do you go about choosing for example duck I mean I you know I don't think I have I have a cook with duck assistant he's not speak for contractual reasons he's shaking his head I don't think I would know where to start is there anything I should be looking for with duck to be fair with me it's more about just having a supplier that you trust like I won't buy any meat really from the supermarket such even if I want stuff for home. L.s.a. And to be fair it's just having confidence in your supplier so my big supplier go move really well I've known him for about 5 years so with my meat supplier fish I get from similar arts on Division Street so it's quite local Just so you can build a relationship and to be fair and if you need to know the guys are pretty good they'll let you know can you really taste the difference when you get a get meat from from a local supplier rather than say to market Yeah 100 percent and it's it's have been faith in what you use and as well to know if it's good quality I think you definitely can taste the difference of like where the aged me especially with beef and things like that so we've played around with age in our own. As well and you definitely can tell the difference just sort of leaving it to hang around the fridge for pics I'm always trying to age things are trying to melt. And really I really go to town so it's a little bit more technical So we've got for instance last year we've done a dish using dot com So we basically cued in a juniper salt and sugar mix 1st 7 days we then rinsed off and wrapped it in like a cheese cloth and hung it in the back of a fridge and serve our separate small fridge at home where our trial these things and we left it in there for one month to dry and essentially it does get the texture of ham quite dry and almost a little bit crispy on the outside but it's really really strong so it's almost like grey Sharky tree if you like. I don't love the idea of sort of wondering into your house and so they bring in fridge wanting to get out tonight just a baby Bell or whatever and then just like oh there's a bad dop has begun their friend for The Advocate what's well on earth is what I say I thought was tell you say that and when they say this is our celeriac say if you smell in that. Smell is quite smoking Yeah so we basically just cut into nice little rectangles quite a decent portion. Of cold smoked outside of my barbecue last night we started at about 8 o'clock and I took off this morning it was still ticking away nicely did you neighbors think they think I'm an honest Luckily one of my neighbors always treat him to a little bit of food when I'm trying things out home so he's quite on board my other neighbors just look at me free to window a little bit and I want I don't wonder ways up too but yes so we just make that last night is still wrong because it's cold smoked so now I just got in a little bit butter which I'm going to I'm going to put it on I don't Scott's father as a little bit about so that is a classic shout know it sounds a lot so yeah about it yes there's probably about 100 grams of butter far for solo aesthetics not lay down and say that's just I mean easier to just cook there in the pan Yes we're just going to keep that chicken away that's probably going to take about 25 minutes in there and just nice and slow low he if the bottom looks like it's been a bit too far if it's going to bit to knock him down with just a tiny touch of water just to bring about and regulate that he and you will just get a nice and caramelized not to talk to it because I often end up sort of the butter gets a bit brown and not not quite as pleasant so a little bit of water yeah I just take the heat down obviously I'll probably end up with this on the grass and as low as it will go and another thing you can do obviously you guys can't see it but it's probably done like this just to sort of take the he out as well if you put your small pond in a big pan to just stop it on a metal tray or something like that just to stop heat coming for as much as we really care for I think that that will save me burning particularly garlic Yes that's it yes. Onion So we're now going to start working on our cheese source as well . So essentially. We're going to do is make like a basic morning a so we're going to start with some pot so we're going to melt and Ok. And this is this is actually a mole modest. No but that's compared to the 1st round here is just because we don't want to make too much here we only need a few portions so so that we're just going to wait till that melts and then we're going to add some flour. Make like a standard root start up back with a touch of milk and it just got a nice little chunk of Lincolnshire poacher cheese here which is like a really nice strong cheddar as once we've made that sort of the base chief source we're going to season out with whole way mustard truffle oil and rice wine vinegar just so it's super intense and so I couldn't see into decadent and that's going to have a day for our area so we're going to thicken up so we can actually like pipe it on to the plate and then just to add another dimension we're just going to get my prick blowtorch out which I absolutely love using and we're going to brulé the cheese sauce brulé cheese so yeah we're going to do this is a super rich dish is intense super tasty fiance had in his has come with you this morning she was sort of getting very excited about the prospect of brulé tea so is this something that you have even eaten before oh no she's she's very you can speak as you can speak and do you presumably get to try all of these dishes that he's coming up with yeah absolutely I get home in this she's so celeriac the barbecues go in that fire alarms go and all sorts is going on better yet she still says My favorite is it with cauliflower that is my favorite. They are well it's all above board and all gods and a lot of other things a lot of breweries not as many as you'd expect that a lot of breweries do sort of start off that way you know obviously you know by now the brewing equipment rents in a building you know it's a big expense for any business so. It's been a really good way again the business off the ground sort of through as much as I need so and in the early days when whenever there was going off the ground it meant that the stress of going to 60 bank loan back and stuff so every where and how long have you been gabble How long have you been going up at just over 2 years you see years in November so it sort of got to the point in November I you know we've been copied room for 2 years abroad Foundation sort of you know kind of. Known brand in Sheffield and my dad sells my beer for me into the Cheshire Cat and large business. Yet you've been dying to say.
