Today many of these food gems find their way to the mercado de abastos, a giant market on the edge of the state capital, oaxaca city. [sizzling] and in this warren of stalls. Hola. Hey, eva ive hunted down the pioneering chef who put oaxacan food on the map, alex ruiz. Uhhuh. This was your playground . [laughs] [laughs] mmhmm. Im sticking close to this guy. But oaxacas most famous ingredient, cacao, actually came here via those trade routes. Ooh, i smell chocolate. And chocolate went on to become a cornerstone of oaxacan gastronomy.
