Here’s a family favourite breakfast. My dad used to make it for my sister and me, I made it for my daughters, and on it moves to a new generation. It’s so easy that you hardly need a recipe at all, but try it once and it’s likely to become a favourite for you too.
Olive oil (for frying the onions and for the brinjals) 60 g tomato paste 1 x 400 g chickpeas and its aquafaba (brine) ½ cup sultanas 600 g lean beef mince Salt to taste 2 big ripe tomatoes, sliced Coriander leaves and stems, chopped 200 g Cheddar cheese (or other such as Gruyere) Method Fry the onions and garlic gently in olive oil until lightly golden. Give them time to caramelise a little, it gives them more flavour. Add the tomato paste and braise for a couple of minutes while stirring.
