Ontario doubles syrup production in past 10 years as demand keeps on rising

Local maple syrup producers are hoping the upcoming season will be even better than last year’s.
The Ontario Maple Syrup Producers’ Association (OMSPA), launched the 2021 season on Friday morning at the On the Bend sugar shack, located right outside of Chesterville on County Road 11. This was done with a ceremonial first tapping of the trees.

Last year, the province produced nearly four million litres of maple syrup, which amounted to about $66 million to $70 million in sales. That production value is nearly double as much as was made in 2011 2.2 million litres. ....

They were delayed by the prolonged deep freeze the previous two weeks and now have a tight window to launch their season.

John Williams, executive director of the Ontario Maple Syrup Producers Association, said some producers in Eastern Ontario began tapping during a brief warm spell before the Polar Vortex descended.
Tapping under extreme cold is both hard on people doing the work and on trees because the inner bark can split and do harm to the tree and leak sap rather than feeding it into pipelines. ....
