People are worn out : Sydney restaurants struggle with reduced takeaway spend during lockdown

Flavio Carnevale could do with a good lie down. The owner of Rushcutters Bay Italian restaurant Marta has been in the kitchen from 2am most days over the past four weeks, topping tarts, rolling scrolls and kneading big slabs of pillowy Roman focaccia.
From 7.30am to 3pm, Carnevale serves his fresh pastries and greets regulars behind Marta s marble counter; by 5pm the chef is back on the pans to cook takeaway gnocchi and parmigianas.
Flavio Carnevale says this lockdown has been a greater challenge than when coronavirus restrictions were introduced in March last year.  ....

What is it?
Black garlic is your normal, everyday culinary garlic that undergoes a remarkable enzymatic transformation under time, heat and humidity. Whole bulbs are matured between two to six weeks, between 60C to 90C at 80-90 per cent humidity.
Lower temperatures and a longer curing time leads to better, deeper flavour, pundits say. During curing, the compounds that make garlic strongly flavoured and powerfully aromatic combine with the natural sugars and protein in a process called the Maillard reaction.
It s the same reaction that makes roast beef brown and cake crumbs golden and delicious. Black garlic s origin is debated, but it appears to have been developed in Korea with patents taken out in the mid-20th century. However, oral histories have black garlic being made in families for centuries. ....

Meat industry shrinks as more Australians embrace flexitarianism

Australia s meat consumption is at its lowest point in 25 years as Australians increasingly move towards environmentally conscious dietary habits. 
According to new data from market research company IBISWorld, the country s meat consumption per capita currently sits at 99.5 kilograms annually, levels not seen since 1996-97. 
Fast food companies are on board the vegan train: Hungry Jack s launched its plant-based Rebel Whopper in 2019.

As a result, the meat processing industry is expected to contract by 10 per cent in 2020-21, falling to $22.2 billion. 
The domestic price of meat has risen at an annualised 3.1 per cent over the past five years, driving more consumers to seek vegetarian alternatives, said IBISWorld senior industry analyst Suzy Oo. ....
