Les veaux sont élevés avec leur mère dans les 60 premiers jours de leur vie à l’intérieur. Par la suite, un bâtiment à air libre et une cour d’exercice leurs permettent un accès à une alimentation de fourrage et de céréale naturel produit par la ferme. En période estivale tout le troupeau est au pâturage. Les sujets sélectionnés pour la transformation sont issus d’un croisement Angus. Ceux-ci doivent avoir atteint un poids de 370 kilos à un âge inférieur d’un an. Les veaux sont élevés sans antibiotique et sans hormone de croissance.. Après plusieurs années de services aux chasseurs pour l’entreposage de leur gibier et de faible prix des sujets vendus pour engraissement, un projet de salle de découpe à germé parmi les membres de la famille Veilleux. Le projet s’est concrétiser au printemps 2014. Les jeunes bœufs sont expédiés à l’abattoir régionale de type A Canada pour l’abattage et inspection. À leurs retours à la boucherie, les carcasses de 180 kilos sont entreposées dans la chambre froide à 2 degrés Celsius pour maturation durant 14 jours. Par la suite celles-ci sont découpées par un boucher d’expérience puis mis sous vide pour être congelé le plus raidement possible.
