The American Southwest was once part of the Nation of Mexico. Before its discovery and conquest by the Spanish and Mexicans, the lands were dominated by native groups, such as the Anasazi and later, the Pueblo, Hopi and Navajo or, as they call themselves, “The People.” Eventually, the People mixed their foods, which included bison, fish, poultry, corn, squash, pumpkins, beans and peppers, with the limited stock (cows, goats, sheep, tomatoes, vegetation and some chilies) brought by the Spanish. The mix of foods evolved into what is Southwest or and Mexican American Cuisine. . . During the nineteen sixties, relying on the Southwest theme, John and Lucie “Lu” Lumis started the Tampico Mexican restaurant chain. John later sold two of his restaurants to Antonio (“Tony”) E. Gonzales and his wife, Dora. Tony was born to Dulciñia Medina who was born in Mora, New Mexico. Dulciñia later moved to Bingham and Salt Lake City, Utah, where she opened a restaurant and cooked for the workers of Utah Copper Company. By 1968, Tony and his wife, Dora, changed the name from Tampico to “Don Antonio’s Mexican Restaurant.” Tony and Dora worked Don Antonio’s until they retired in 1998. At that time, they sold their business to Dulciñia’s Grandson and his wife, George and Norma Lopez. . . Today, the story continues. Don Antonio’s is now Don Antonio’s Southwest Restaurant. In the spirit of Dulciñia, Tony and Dora and the Tampico founders, Don Antonio’s continues to emphasize the food and culture of the American Southwest People. The owners focus on authenticity while enhancing the customer dining experience. Their cuisine reflects the type of café style eateries one might find in such places as Santa Fe or Taos, New Mexico or one of the many café’s along the old “Route 66” highway. . .
