Well get als forecast in a minute, but lets go to nbcs Gabe Gutierrez who is in the thick of it in haiti this reporter savannah, the eye of the storm is about to slam into the southwestern tip of this country here in portauprince. We are already starting to see the rain pick up. As you mentioned, this is the most powerful atlantic hurricane in almost a decade. This morning, Hurricane Matthew, a slowmoving category 4 juggernaut is beginning to tear through haiti. Hardest hit the impoverish countrys southwest peninsula. Some fear up to 40 inches of rain in some areas triggering deadly mudslides. The storm could be highly devastating for haiti, particul reporter nasa capturing this dramatic view of the monster storm from space, its eye clearly visible. Matthews relentless storm surge and torrential rain flooding parts of jamaica. My roof is not solid and hurricane is coming. Reporter eastern cuba and the bahamas now on high alert as the storm slogs through the caribbean and now even threatening the u. S. East coast floridas governor has already declared a state of emergency. If matthew directly impacts florida, there will be massive destruction that we havent seen in years. Well, they are definitely expecting to get a direct hit here. They are preparing for a direct hit, especially with that slight westerly turn that matthew appears to be taking. Here on the eastern end of cuba, what theyve done is what you would expect. Theyve gotten saws out and theyve started cutting down some of the trees that they think the wind will take down, as well as removing some of the of 100plus miles could easily accepted airborne. There are limited supplies here to prepare a home. But what theyve been able to do is get what they could find and put those supplies over windows, and in some cases put sandbags on roofs. Those roofs made out of corrugated metal that could easily go airborne. It will be interesting to see whether those sandbags actually do much once winds hit 60plus Miles Per Hour. Meantime, Evacuation Centers here on the eastern end of the island are opening. People have already gone to the university of guantanamo where they will ride out the storm. Many of those people have come in from the nearby sierra mountains, as well as along the coast here. Right behind me here, they expect the storm surge to be up to 11 feet. Dangerous. 165 miles south of eastern cuba. 145mileperhour winds. Its moving to the north at 9 Miles Per Hour, so its Forward Motion has picked up. By wednesday morning, it will have cleared. Early wednesday morning. With 130mileperhour winds, still a category 4 storm. Thursday morning, its a category 3 storm. Still a dangerous storm battering all of the bahamas. By friday morning, look at how close it is to the eastern coast of florida. We are talking the cone of uncertainty only 270 miles wide. And by saturday morning, its just off the South Carolina coast. As you move into sunday morning, Cape Hatteras is under the gun. You look at the models, the three models we look at the National Hurricane center, the u. S. And the euro. Potential impacts three to six inches. We move on in to friday and saturday, coastal South Carolina, North Carolina, five to ten inches, storm surges, six feet above. Moving into sunday, the u. S. Model brings it right off the shoreline of new jersey and new york. One to three inches of rainfall, coastal flooding, beach erosion. Rainfall amounts, we are looking basically at anywhere from five to eight, maybe even ten inches of rain along the south to North Carolina coast, guys. So flooding isng beach erosion. Now we move to developments on that new jersey train crash investigation. The ntsb says crews are working 12hour shifts to clear debris from the hoboken terminal. They still have not been able to extract the recorder from the trains front car. Officials say that recorder in the rear of the train that was supposed to store speed and braking information wasnt functioning on the day of the accident. One person was killed, more than 100 injured in last thursdays crash. It is day two of a trial of a georgia father accused of intentionally leaving his 22monthold son to die in a sweltering car. I was shocked by how much you were doing while you were i remember thinking this girl is not only strong physically but mentally. Then im reading the book and you say it wasnt always that way. No. It definite wasnt always that way. I think im strong when it comes to working out and everything i do on the mountain, i feel confident in myself. But a lot of times i really dont feel that confident. I dont know. I have my insecurities, like everyone else. Being on the mountain is really the only time i feel i dont this book is a little memoir and a lot fitness and diet and all that sort of thing. Not diet. Well, not diet. I was going to get to that. You say diets dont really work. I dont believe in the word. Just in general. I mean diets are something you do for a short period of time to try to lose weight. My book is about just making healthy choices, understanding the choices that youre making and doing so in a way that makes you feel better and feel more confident. More of a lifestyl yeah, i have. How did that go . It doesnt work. Ive tried paleo. I was on this crazy high carbohydrate diet. Ive been on atkins style diets. None of those things work. There is a lot about working out in the book. One piece of advice you say to people, if you still think working out cant be fun, then you just havent found the right workout. Exactly. How do you suggest people go about finding the right workout its experimenting. Of course, some things when you are working hard it is not always the most fun. But it is finding something that will keep you going back to the gym. If you like pilates, thats awesome. Do pilates. If you like doing squats, just go experiment, have fun, try something new. Thats kind of what my book is about. Just gives you a lot of options and you can try inater gets you the gym and allows you to have fun, thats what its a he all when you became strong and fit, obviously a natural talent as welling, you became a champi. One of the things that came with becoming a champion, you became a celebrity. Having known you a while, ive always felt you werent as comfortable with that side of things as the athletic side of things. Fair . Very fair. Im very confident on a mountain, like i said. I havent felt like i fit in on the red carpet. Type. I have are insecurities. Youre selfconscious about that . Of course, when im glammed up i feel beautiful and more confident. But when i go home, im like i was sitting next to emily blunt and she is amazingly beautiful and i dont compare to that. If you add just one or two to your diet, its healthy and delicious. Cooking and thats people always ask me how do i stay from eating all the food on top chef. A lot has to do with the spices. They rage your metabolism. They add flavor without fat and calories. The book covers all kinds of spices. Were looking at curry today. Were looking at skap lops. Today were using curry powder. These are all the ingreen make our dish today. Scallops, butter, salt and pepper, garlic, curry. Compound butter is a seasoned butter. Its a great way to introduced spices in an approachable way. Infuses whatever cooking in it. Weve cubed up Room Temperature butter that was left on the counter with curry powder. Spicy. A lot of people think that. It doesnt mean spicy at all. Use a mild curry powder. You want to mix that up. Youre going to put it in a ramekin like this. Just keep it in the french under saran wrap. You can also make a log with it. Will it last for awhile in. Yes. For a long time. Youre putting this in then put the psychoscallops. Pretend its melted more than it has. I smell that. If you wanted to do a mediterranean version of this, all you would do is swap out the curry powder for herbs of provance. You can use it in all your cooking. You want to it caramelize. While this is cooking down, ill watch this. Youre going to heat some spices. Yes. Ooum going to show you how to roast whole spices. That wakes up all the oils in your cooking. You want a hot, dry pan. Youre just going to add caramom, cloves. When you add them, you want to break the pods and get the dark seeds out. While you do that, lets look downstairs. Then you have the fish. Then we have two things were going to garnish the tacos with. One is a creamy slaw, very easy to make. And then we have a salsa thats has fried chipotle chilies, pine vinegar. These will keep in the fridge. You add the salsa. These tacos here are a variation of it. These are layered tacos. This is dinner in 15 minutes. You have the bacon that you fry. Then you are going to add the meat in the rendered fat. You can use tenderloin tips. Any kind of cubed meat that you find. Then you let it brown for a little. Then we add some onion, some jalapenos, some garlic. And the secret here is, fireroasted tomatoes that you can get in the can or you roast them at home. Add them in here. Cook it for five minutes.
