Catering companies were our coal-mine canaries for 2020. In February, weeks before most of us realized the new coronavirus had settled in for the long haul, massive corporations, fundraising nonprofits and expectant brides were all working the phones, canceling large events deep into spring.
Catherine Buford Pellegrin watched it happen. As the managing partner at Portland’s ChefStable Catering with decades of experience in the field, Buford Pellegrin typically oversees three events each day, from small private parties to nonprofit gala fundraisers to corporate holiday parties and more.
