It was purchased by Singapore company NDG Asia Pacific (NZ) Limited for $53m in 2012, and in 2017 the company was given approval by the Overseas Investment Office to build and operate a 52-storey, five- star Ritz-Carlton Hotel, with 300 guest rooms, four floors for hotel facilities, six for retail and five for car parking. The development is expected to cost $350m, with the start of construction dependent on the completion of City Rail Link. However, the resource consent for the tower is due to expire in October.
He spent 8-10 years developing the recipe until he finally found one which was consistently reliable and wholly unique. Initially, baking was contracted out to another local baker. Later we moved to a dedicated facility, partially to meet demand, but also to prevent cross-contamination. We were able to inherit a 100-year-old oven which we still use today. Much of our equipment and supplies have been second-hand or hand-made by the owners and staff. Op shops have been our saviour in many cases.

Location: Corner of High St and Shortland St, about a five-minute walk from the Britomart Train Station. Queen St is just a stone's throw away, and the area is abundant in high-end and boutique shopping and eateries.

First impressions: The Hotel DeBrett building was originally built in 1841, and despite two fires and two rebuilds, its iconic facade remains much the same. The foyer is cosy and intimate, with a grand wooden staircase leading up to the first and second floors. The custom-made striped carpet will be etched into your mind forever; it's a unique part of the decor throughout the hotel and the hotel branding, with its stripes of burgundy, black, blue and yellow.
