Hi all,It just occurred to me that the last time I purchased whole wheat flour, I had accidentally bought WW flour intended for use in bread machines. I have been using up to 10% in loaves, and 50% for starter refreshes. I noticed that the gas bubbles in my starter will hold their shape long after it has gone hungry, where as with normal flours, the bubbles would collapse

Another loaf, another flat disc. I just cannot seem to get a handle on sourdough bread. I have been meticulously maintaining my starter for two months now, never skipped a single feeding, never let it get stagnant, always calculate to the gram, always careful of its temperature, always making sure the filtered water is at the correct temp etc etc... it just does not want to

Hi everyone 👋I am having a problem where my dough won't double in size if I don't use commercial yeast together with my sourdough starter.My starter is generally pretty active. I feed it twice a day 20g AP unbleached flour and 5g rye flour.
