The hospitality veteran behind the Fifth String, who died on Sunday, was beloved for his delicious cooking and joyful personality.

The restaurant owner was days away from opening his eatery's new location in Park Hill when he unexpectedly passed away.

“It was really amazing to work side-by-side with somebody that was so talented and fun," said Justin Brunson.

Denver chef Amos Watts, owner of The Fifth String, has died weeks ahead of the acclaimed restaurant’s reopening. He died Sunday morning after a medical episode.

Other openings this week include Lilac Coffee Express and Rolling Pin Pizza, while Alpine Dog served its last beer.

Its the latest in a string of new dumpling options that have debuted in the Denver metro area in the last year.

The Fifth String — which Watts originally opened in LoHi in 2020 — will reopen in 3,200 square feet at 1490 Eudora St., along East Colfax in the Hale neighborhood.

Also among the seventeen new additions are L&L Hawaiian Barbecue, Call Your Mother in Capitol Hill and Full Tank Food Park.
